Healthy Rice Cereal Bars

Hi everybody,

So after the start of the new year when I was putting together a plan for getting back into my fitness routine, I was experimenting with healthy snacks and bars in particular (which I love) and I came up with this recipe. These bars have the same texture and look just like the Rice Krispies Bars you know and love, but they don’t have all the sugar because they are held together with peanut butter and honey instead of marshmallows. Bottomline, these are the best of both worlds: they taste great, are healthy, and they remind you of a favorite treat!

Here’s the recipe!

Ingredients

  • 2 cups rice cereal ( I used Rice Krispies)
  • 1/2 cup sliced almonds
  • 1/4 cup raisins
  • 1/4 cup honey
  • 1/2 cup peanut butter
  1. Gather your ingredients, a large mixing bowl and a spatula.
  2. Mix your honey and peanut butter in bowl until they are well combined.
  3. Fold in the rice cereal, sliced almonds, and raisins. Make sure everything is thoroughly combined and well distributed throughout.
  4. Spread a piece of parchment paper into the bottom of a glass baking dish.
  5. Scrape the mixture out of the bowl and into the prepared baking dish, press the mixture down into the dish and spread it out evenly.
  6. Refrigerate until it’s firm enough to cut with a knife.
  7. Remove the bars from the baking dish by pulling up on the parchment paper, then cut into bars.
  8. Enjoy!
